  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 1/4 cup melted butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 cup diced apples
  • 4 slices turkey bacon

Instructions

  1. In a large bowl, mix the flour, sugar, baking powder, and salt.
  2. In another bowl, whisk together the milk, egg, melted butter, vanilla, and ground cinnamon.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the diced apples.
  4. Heat a non-stick skillet over medium heat and grease lightly.
  5. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.
  6. Meanwhile, cook the turkey bacon in another skillet until crispy.
  7. Serve the pancakes warm with turkey bacon on the side.

Notes

  • For extra flavor, add a pinch of nutmeg to the pancake batter.
  • These pancakes can be kept warm in a low oven while you cook the rest.
