- 1 cup cottage cheese
- 4 eggs
- 1/2 cup cooked turkey bacon, chopped
- 1/2 cup shredded cheese (cheddar or mozzarella)
- 1/4 cup chopped spinach
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- Preheat the oven to 350°F (175°C).
- In a large bowl, whisk together the cottage cheese and eggs until smooth.
- Add in the turkey bacon, shredded cheese, chopped spinach, salt, and pepper. Mix well.
- Pour the mixture into a greased muffin tin, filling each cup about 3/4 full.
