- 2 medium zucchinis
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 egg
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1/2 cup feta cheese
- 1 tablespoon fresh dill
- 1 tablespoon fresh parsley
- 1 tablespoon lemon juice
- Preheat the oven to 425°F (220°C).
- Slice the zucchinis into fry shapes.
- In a bowl, mix breadcrumbs, Parmesan, garlic powder, salt, and pepper.
- In another bowl, beat the egg.
- Dip each zucchini slice in the egg, then coat in the breadcrumb mixture.
- Place the coated zucchini on a baking sheet lined with parchment paper.
- Drizzle with olive oil and bake for 20-25 minutes until golden and crispy.
- For the dip, combine feta, dill, parsley, and lemon juice in a blender and blend until smooth.
- Serve the zucchini fries warm with the herby feta dip.
