Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press this mixture into the bottom of cupcake liners in a muffin tin.
  3. In a large bowl, beat the cream cheese until smooth. Gradually add sugar and vanilla extract.
  4. Add eggs, one at a time, mixing well after each addition. Finally, fold in the sour cream.
  5. Pour the cheesecake mixture over the crusts in the muffin tin.
  6. Bake for 20 to 25 minutes, or until the centers are set. Let cool, then refrigerate for at least 4 hours before serving.
