  • 2 pounds chuck roast
  • 1 pound bone-in short ribs
  • 1 onion, quartered
  • 4 cloves garlic
  • 3 dried guajillo chiles
  • 2 dried ancho chiles
  • 1 tablespoon cumin
  • 1 teaspoon oregano
  • 1 teaspoon black pepper
  • 4 cups beef broth
  • 12 corn tortillas
  • 1 lime, cut into wedges
  • 1 cup fresh cilantro, chopped
  • 1 cup diced onion
  • 1 cup crumbled queso fresco

Instructions

  1. Start by heating a pot over medium heat. Add the chuck roast and short ribs, searing them until browned on all sides.
  2. Add the onion, garlic, dried chiles, cumin, oregano, and black pepper to the pot and stir to combine.
  3. Pour in the beef broth, bring to a boil, then reduce to a simmer and cover the pot. Cook for about 2 hours, or until the meat is tender.
  4. Remove the meat from the pot and shred it using forks. Strain the remaining broth and discard the solids.
  5. Heat the tortillas on a skillet and fill them with the shredded meat. Top with diced onion, cilantro, and cheese.
  6. Serve with lime wedges and the reserved broth for dipping.

Notes

  • For spicier tacos, add more chiles to your meat mixture.
  • Make sure to let the broth cool before storing it in the refrigerator.
