- 2 pounds chuck roast
- 1 pound bone-in short ribs
- 1 onion, quartered
- 4 cloves garlic
- 3 dried guajillo chiles
- 2 dried ancho chiles
- 1 tablespoon cumin
- 1 teaspoon oregano
- 1 teaspoon black pepper
- 4 cups beef broth
- 12 corn tortillas
- 1 lime, cut into wedges
- 1 cup fresh cilantro, chopped
- 1 cup diced onion
- 1 cup crumbled queso fresco
- Start by heating a pot over medium heat. Add the chuck roast and short ribs, searing them until browned on all sides.
- Add the onion, garlic, dried chiles, cumin, oregano, and black pepper to the pot and stir to combine.
- Pour in the beef broth, bring to a boil, then reduce to a simmer and cover the pot. Cook for about 2 hours, or until the meat is tender.
- Remove the meat from the pot and shred it using forks. Strain the remaining broth and discard the solids.
- Heat the tortillas on a skillet and fill them with the shredded meat. Top with diced onion, cilantro, and cheese.
- Serve with lime wedges and the reserved broth for dipping.
Notes
- For spicier tacos, add more chiles to your meat mixture.
- Make sure to let the broth cool before storing it in the refrigerator.
