  • 2 pounds beef chuck roast
  • 1 tablespoon olive oil
  • 3 garlic cloves, minced
  • 1 onion, chopped
  • 2 cups beef broth
  • 3 dried guajillo chilies, seeds removed
  • 1 dried ancho chili, seeds removed
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • 12 corn tortillas
  • 1 cup cilantro, chopped
  • 1 lime, cut into wedges

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the chopped onion and garlic, sauté until translucent.
  2. Add the beef chuck roast to the pot and sear on all sides. Remove and set aside.
  3. In the same pot, add the dried chilies and toast for a minute. Then add beef broth, cumin, oregano, and bay leaf.
  4. Return the beef to the pot, bring to a simmer, cover, and cook for about 2 to 3 hours until tender.
  5. Remove the beef, shred it, and return it to the broth.
  6. Heat tortillas on a griddle, fill with the beef mixture, and top with cilantro and lime.

Notes

  • For a spicier version, add more chilies.
  • Serve with additional lime on the side for extra flavor.
