- 2 pounds beef chuck roast
- 1 tablespoon olive oil
- 3 garlic cloves, minced
- 1 onion, chopped
- 2 cups beef broth
- 3 dried guajillo chilies, seeds removed
- 1 dried ancho chili, seeds removed
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1 bay leaf
- 12 corn tortillas
- 1 cup cilantro, chopped
- 1 lime, cut into wedges
- In a large pot, heat olive oil over medium heat. Add the chopped onion and garlic, sauté until translucent.
- Add the beef chuck roast to the pot and sear on all sides. Remove and set aside.
- In the same pot, add the dried chilies and toast for a minute. Then add beef broth, cumin, oregano, and bay leaf.
- Return the beef to the pot, bring to a simmer, cover, and cook for about 2 to 3 hours until tender.
- Remove the beef, shred it, and return it to the broth.
- Heat tortillas on a griddle, fill with the beef mixture, and top with cilantro and lime.
Notes
- For a spicier version, add more chilies.
- Serve with additional lime on the side for extra flavor.
