Broccoli Cheddar Soup

A creamy and delicious broccoli cheddar soup with a twist of turkey bacon, perfect for a comforting meal.

  • 4 cups broccoli florets
  • 1 cup shredded cheddar cheese
  • 4 slices turkey bacon
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat, then add turkey bacon and cook until crispy. Remove and set aside.
  2. Add onion and garlic to the pot, sautéing until translucent.
  3. Add broccoli and vegetable broth, bringing to a simmer. Cook until broccoli is tender.
  4. Blend the soup until smooth, then return to heat and stir in heavy cream and cheddar cheese.
  5. Season with salt and pepper to taste, and top with crumbled turkey bacon before serving.

Notes

  • For extra flavor, try adding some red pepper flakes.
  • This soup can be easily made vegetarian by omitting the turkey bacon.
