  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup graham cracker crumbs
  • 2 tablespoons melted butter
  • 1/4 cup powdered sugar (for dusting)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine the cream cheese, granulated sugar, and softened butter. Beat until smooth.
  3. Add the vanilla extract and eggs, mixing until fully incorporated.
  4. In a separate bowl, mix graham cracker crumbs with melted butter.
  5. Press the graham cracker mixture into the bottom of a mini muffin tin.
  6. Fill each cup with the cream cheese mixture.
  7. Bake for 15-18 minutes or until set. Let cool completely.
  8. Before serving, dust with powdered sugar.
