  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 1 cup all-purpose flour
  • 1/2 cup vegetable oil
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 16 ounces cream cheese
  • 1 cup powdered sugar
  • 1 teaspoon lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch springform pan.
  2. In a large bowl, mix together the grated carrots, granulated sugar, brown sugar, and vegetable oil.
  3. Add the eggs and vanilla, then mix until well combined.
  4. In another bowl, combine the flour, cinnamon, nutmeg, salt, baking powder, and baking soda.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  6. Pour half of the batter into the prepared pan and bake for 20 minutes.
  7. Meanwhile, in a mixing bowl, beat the cream cheese, powdered sugar, and lemon juice until smooth.
  8. After the first layer has baked, spread the cream cheese mixture over the cake.
  9. Top with the remaining carrot cake batter and bake for an additional 30-35 minutes until set.
  10. Allow to cool, then refrigerate for at least 4 hours before serving.
