Chicken and Spinach Lasagna

This Chicken and Spinach Lasagna is an easy and delicious comfort food recipe that combines tender chicken, fresh spinach, and cheesy goodness in every layer.

Ingredients

  • 2 cups cooked chicken, shredded
  • 3 cups fresh spinach
  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1 cup parmesan cheese, grated
  • 2 cups marinara sauce
  • 1 egg
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine shredded chicken, spinach, ricotta cheese, egg, garlic powder, Italian seasoning, salt, and pepper.
  3. Spread a layer of marinara sauce on the bottom of a baking dish.
  4. Layer three lasagna noodles over the sauce.
  5. Spread half of the chicken and spinach mixture over the noodles.
  6. Sprinkle one-third of the mozzarella cheese over the chicken mixture.
  7. Repeat the layers, finishing with a final layer of lasagna noodles, marinara sauce, and the remaining mozzarella and parmesan cheese on top.
  8. Cover the dish with aluminum foil and bake for 25 minutes.
  9. Remove the foil and bake for an additional 15 minutes, until the cheese is bubbly and golden.
  10. Let it cool for a few minutes before slicing and serving.

Notes

  • This lasagna can be made ahead of time and stored in the refrigerator for up to 24 hours.
  • Feel free to add other vegetables like mushrooms or bell peppers for extra flavor.
