Chicken Pot Pie Soup

A warm and creamy chicken pot pie soup made with turkey bacon and fresh vegetables.

  • 1 pound turkey bacon
  • 1 medium onion, diced
  • 3 carrots, sliced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 1/3 cup all-purpose flour
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups cooked chicken, shredded
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup frozen peas
  • 1 cup corn

Instructions

  1. Cook the turkey bacon in a large pot over medium heat until crispy. Remove and set aside.
  2. In the same pot, add the onion, carrots, and celery. Cook until softened.
  3. Add the garlic and flour, stirring for 1 minute.
  4. Gradually add chicken broth, stirring continuously, until the mixture thickens.
  5. Stir in the heavy cream, chicken, thyme, salt, and pepper.
  6. Bring to a simmer and add the peas and corn. Cook for an additional 5 minutes.
  7. Crumble the cooked bacon on top before serving.

Notes

  • For a thicker soup, increase the flour.
  • Feel free to add more vegetables.
