Chicken Pot Pie Soup

  • 1 pound chicken breast
  • 4 strips turkey bacon
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon thyme
  • 1 teaspoon parsley
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and crumble it.
  2. In the same pot, add olive oil and sauté onions, garlic, carrots, and celery until soft.
  3. Add diced chicken breast and cook until no longer pink.
  4. Stir in potatoes, chicken broth, thyme, and season with salt and pepper. Bring to a simmer.
  5. Once the potatoes are tender, stir in heavy cream and crumbled turkey bacon. Heat through.
  6. Remove from heat and add fresh parsley before serving.

Notes

  • This soup can be made ahead and stored in the refrigerator.
  • For added flavor, use homemade chicken broth.
