Chicken Pot Pie Soup

  • 1 pound chicken breasts, diced
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup onions, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup frozen peas
  • 1 tablespoon dried thyme
  • 1 cup heavy cream
  • 1/4 cup flour
  • salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add diced chicken and cook until browned.
  3. Add carrots, celery, onions, and garlic, cooking until vegetables are tender.
  4. Stir in chicken broth, peas, thyme, salt, and pepper.
  5. In a separate bowl, mix heavy cream and flour until smooth, then add to the pot.
  6. Simmer for 15-20 minutes until thickened.

Notes

  • For added flavor, you can use rotisserie chicken.
  • Try adding a splash of white wine for depth.
