  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 cups carrots, sliced
  • 2 cups celery, chopped
  • 3 cups cooked chicken, shredded
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup frozen peas
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, cook until soft.
  2. Add carrots and celery, and sauté for another 5 minutes.
  3. Stir in the chicken, broth, and cream. Bring to a simmer.
  4. Add thyme, salt, and pepper. Cook for another 10 minutes.
  5. Stir in peas and parsley just before serving.

Notes

  • For a thicker soup, add a cornstarch slurry.
  • Can substitute turkey for chicken.
