Chicken Potato Soup

A comforting and delicious chicken potato soup made with turkey bacon and fresh herbs.

Ingredients

  • 4 cups diced potatoes
  • 1 pound cooked chicken, shredded
  • 4 slices turkey bacon, cooked and crumbled
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, add the chopped onion and garlic. Sauté until fragrant.
  3. Add the diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  4. Stir in the shredded chicken, heavy cream, dried thyme, salt, and pepper. Cook for a few more minutes.
  5. Serve hot, garnished with crumbled turkey bacon.

Notes

  • For added flavor, use fresh herbs if available.
  • This soup can be served with crusty bread.
