  • 1 pound boneless, skinless chicken breasts
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) black beans, drained and rinsed
  • 4 cups chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup corn (fresh, frozen, or canned)
  • 1 lime, juiced
  • 1 cup shredded cheese (optional)
  • 1 avocado, diced (for garnish)
  • 1 handful of fresh cilantro (for garnish)

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and garlic, sauté until softened.
  3. Stir in the chicken breasts, cooking until browned on all sides.
  4. Add tomatoes, black beans, chicken broth, cumin, chili powder, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Add corn and simmer for another 5 minutes.
  7. Remove chicken, shred it, and return it to the pot.
  8. Stir in lime juice and adjust seasoning if necessary.
  9. Serve hot, garnished with cheese, avocado, and cilantro.
