Chicken Tortilla Soup

A delicious and comforting Chicken Tortilla Soup that’s easy to make and perfect for a family meal.

Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 4 cups chicken broth
  • 1 (14.5 ounces) can diced tomatoes
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 jalapeño, chopped (optional)
  • Salt to taste
  • Pepper to taste
  • 1 cup tortilla strips
  • 1 avocado, diced (for serving)
  • 1/2 cup cilantro, chopped (for serving)
  • 1 lime, cut into wedges (for serving)

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chicken breasts and cook until browned on both sides. Remove and set aside.
  3. In the same pot, add onion and garlic; sauté until soft.
  4. Stir in cumin and chili powder, cooking for an additional minute.
  5. Add chicken broth, diced tomatoes, black beans, corn, and jalapeño; bring to a simmer.
  6. Return chicken to the pot and cook until fully cooked, about 15 minutes.
  7. Shred the chicken and return to the pot.
  8. Season with salt and pepper to taste.
  9. Serve hot topped with tortilla strips, avocado, cilantro, and lime wedges.

Notes

  • This soup can be made ahead of time and stored in the fridge.
  • Adjust the spice level by adding more or less jalapeño.
