- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 4 cups chicken broth
- 1 (14.5 ounces) can diced tomatoes
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 jalapeño, chopped (optional)
- Salt to taste
- Pepper to taste
- 1 cup tortilla strips
- 1 avocado, diced (for serving)
- 1/2 cup cilantro, chopped (for serving)
- 1 lime, cut into wedges (for serving)
- In a large pot, heat olive oil over medium heat.
- Add chicken breasts and cook until browned on both sides. Remove and set aside.
- In the same pot, add onion and garlic; sauté until soft.
- Stir in cumin and chili powder, cooking for an additional minute.
- Add chicken broth, diced tomatoes, black beans, corn, and jalapeño; bring to a simmer.
- Return chicken to the pot and cook until fully cooked, about 15 minutes.
- Shred the chicken and return to the pot.
- Season with salt and pepper to taste.
- Serve hot topped with tortilla strips, avocado, cilantro, and lime wedges.
Notes
- This soup can be made ahead of time and stored in the fridge.
- Adjust the spice level by adding more or less jalapeño.
