Christmas Spice Cake with Eggnog Buttercream

A festive and delicious Christmas Spice Cake topped with rich Eggnog Buttercream.

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 tablespoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 cup eggnog

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix the flour, baking soda, baking powder, spices, and salt.
  3. In another bowl, combine brown sugar, granulated sugar, and oil, then beat in eggs one at a time.
  4. Gradually add the dry ingredients to the egg mixture, alternating with buttermilk.
  5. Stir in the vanilla and eggnog until combined.
  6. Pour the batter into greased cake pans and bake for 30-35 minutes.
  7. Let cool before frosting with Eggnog Buttercream.

Notes

  • Make sure your eggs and buttermilk are at room temperature.
  • For a richer flavor, let the cake sit overnight before serving.
