Christmas Spice Cake with Eggnog Buttercream

  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 tablespoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 cup vegetable oil
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a bowl, whisk together flour, baking soda, baking powder, cinnamon, ginger, nutmeg, and salt.
  3. In another bowl, beat together oil, brown sugar, and granulated sugar until well combined.
  4. Add eggs one at a time, mixing well after each addition, and then mix in the vanilla.
  5. Alternate adding the dry ingredients and buttermilk to the wet mixture, starting and ending with the dry.
  6. Divide the batter evenly between the prepared pans.
  7. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  8. Let the cakes cool in the pans for 10 minutes before transferring to wire racks to cool completely.
  9. For the Eggnog Buttercream, beat together butter, powdered sugar, eggnog, and nutmeg until fluffy.
  10. Once the cakes are cool, frost with Eggnog Buttercream and serve.

Notes

  • For extra spice, add chopped nuts or dried fruits to the batter.
  • This cake can be made a day in advance and stored covered in the refrigerator.
