1 teaspoon baking powder
1/2 teaspoon salt
1/4 cup unsalted butter, softened
1/2 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1/2 cup whole milk
1/4 cup granulated sugar (for topping)
1 tablespoon ground cinnamon (for topping)
Instructions
Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
In a medium bowl, whisk together flour, baking powder, and salt.
In a large bowl, cream together the butter and sugar until light and fluffy.
Beat in the egg and vanilla extract, then gradually mix in the dry ingredients alternately with the milk.
Fill each cupcake liner about 2/3 full with batter.
Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
While the cupcakes are baking, mix the sugar and cinnamon in a small bowl.
Remove cupcakes from the oven and allow to cool for a few minutes before rolling in the cinnamon sugar mixture.
Notes
For extra flavor, consider filling the cupcakes with dulce de leche.
