Classic Minestrone Soup

A delicious and hearty twist on classic minestrone soup, featuring turkey bacon and chicken ham for extra flavor.

Ingredients

  • 2 tablespoons olive oil
  • 4 ounces turkey bacon, diced
  • 1 cup chicken ham, chopped
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes
  • 1 can (14.5 ounces) diced tomatoes
  • 6 cups vegetable broth
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 cup pasta (like small shells or ditalini)
  • 1 cup green beans, chopped
  • 2 cups spinach or kale, chopped
  • 1 lemon, juice and zest

Instructions

  1. In a large pot, heat olive oil over medium heat. Add turkey bacon and cook until crispy.
  2. Add chicken ham, onion, carrots, celery, and garlic. Sauté until vegetables are softened.
  3. Stir in oregano, basil, and red pepper flakes, and cook for another minute.
  4. Add diced tomatoes and vegetable broth. Bring to a boil.
  5. Add kidney beans, pasta, and green beans. Reduce heat and simmer until pasta is cooked, about 10 minutes.
  6. Stir in spinach or kale and lemon juice. Cook for another 2 minutes.
  7. Season with salt and pepper to taste. Serve hot.

Notes

  • This soup can be made ahead of time and tastes even better the next day.
  • Feel free to add any other vegetables you have on hand.
