- 4 ounces turkey bacon, diced
- 1 cup chicken ham, chopped
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon red pepper flakes
- 1 can (14.5 ounces) diced tomatoes
- 6 cups vegetable broth
- 1 can (15 ounces) kidney beans, drained and rinsed
- 1 cup pasta (like small shells or ditalini)
- 1 cup green beans, chopped
- 2 cups spinach or kale, chopped
- 1 lemon, juice and zest
- In a large pot, heat olive oil over medium heat. Add turkey bacon and cook until crispy.
- Add chicken ham, onion, carrots, celery, and garlic. Sauté until vegetables are softened.
- Stir in oregano, basil, and red pepper flakes, and cook for another minute.
- Add diced tomatoes and vegetable broth. Bring to a boil.
- Add kidney beans, pasta, and green beans. Reduce heat and simmer until pasta is cooked, about 10 minutes.
- Stir in spinach or kale and lemon juice. Cook for another 2 minutes.
- Season with salt and pepper to taste. Serve hot.
