  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 cup green beans, trimmed and cut
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups spinach, chopped
  • 1 cup small pasta (like ditalini)

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery; sauté until tender.
  3. Stir in garlic; cook for 1 minute.
  4. Add vegetable broth, diced tomatoes, kidney beans, and green beans; bring to a boil.
  5. Season with basil, oregano, salt, and pepper.
  6. Reduce heat and simmer for 20 minutes.
  7. Add spinach and pasta; cook until the pasta is al dente.
  8. Adjust seasoning if necessary and serve hot.
