  • 1 cup cake flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 1/2 cup brown sugar
  • 2 teaspoons cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, mix the all-purpose flour, cake flour, baking powder, baking soda, and salt.
  3. In a separate bowl, cream together the butter and granulated sugar until fluffy.
  4. Beat in the eggs, one at a time, and stir in the vanilla.
  5. Mix in the flour mixture alternately with the sour cream until just combined.
  6. In another bowl, combine the brown sugar and cinnamon for the topping.
  7. Scoop the batter into the muffin tin, adding a sprinkle of the topping mixture to each muffin.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Allow to cool before serving.
