Colcannon Soup

A comforting blend of creamy potatoes and vibrant greens.

Ingredients

  • 4 cups potatoes, peeled and diced
  • 2 cups kale, chopped
  • 1 cup heavy cream
  • 4 tablespoons butter
  • 1 cup onion, diced
  • 4 cups chicken broth
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt butter over medium heat. Add the onions and sauté until translucent.
  2. Add the diced potatoes and chicken broth, bring to a boil, then reduce heat and simmer until potatoes are tender.
  3. Mix in the kale and cook until wilted.
  4. Use an immersion blender to blend the soup until smooth.
  5. Stir in the heavy cream and season with salt and pepper. Heat through before serving.
