Colcannon Soup

A rich and creamy Colcannon Soup made with turkey bacon and chicken ham, perfect for a warm meal.

  • 4 cups potatoes, peeled and diced
  • 1 cup turkey bacon, chopped
  • 1 cup chicken ham, diced
  • 1 cup heavy cream
  • 4 cups chicken broth
  • 1 cup green onions, sliced

Instructions

  1. In a large pot, cook the chopped turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, add diced potatoes and chicken broth. Bring to a boil and cook until potatoes are tender.
  3. Add the chicken ham and green onions; simmer for 5 minutes.
  4. Use an immersion blender to puree the soup until smooth.
  5. Stir in the heavy cream and return to heat. Simmer for an additional 5 minutes.
  6. Serve hot, garnished with crispy turkey bacon and extra green onions.

Notes

  • This soup can be made ahead of time and reheated.
  • For a vegetarian version, substitute turkey bacon and chicken ham with plant-based alternatives.
