Cottage Cheese Pancakes

These cottage cheese pancakes are deliciously easy to make and pair perfectly with crispy turkey bacon for a wholesome breakfast.

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup milk
  • 1 tablespoon olive oil
  • 4 strips turkey bacon

Instructions

  1. In a large bowl, mix the cottage cheese, flour, eggs, sugar, baking powder, and salt until combined.
  2. Add the milk and olive oil, stirring until the batter is smooth.
  3. Heat a skillet over medium heat and pour about 1/4 cup of batter for each pancake.
  4. Cook until bubbles form on the surface, then flip and cook until golden brown.
  5. In a separate pan, cook turkey bacon until crispy.
  6. Serve the pancakes warm with turkey bacon on the side.
