Cranberry Orange Cottage Cheese Muffins

  • 1/2 cup sugar
  • 1/2 cup orange juice
  • 1/4 cup vegetable oil
  • 1 large egg

  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the cottage cheese, sugar, orange juice, vegetable oil, and egg until well combined.
  3. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients and stir until just combined. Fold in the cranberries and vanilla extract.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
