Cranberry Pistachio Shortbread Cookies

These cranberry pistachio shortbread cookies are a delightful festive treat that are easy to make at home.

  • 2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup chopped pistachios
  • 1 cup dried cranberries, chopped
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the butter and powdered sugar until light and fluffy.
  3. Add in the vanilla extract and mix well.
  4. Slowly mix in the flour and salt until combined.
  5. Fold in the chopped pistachios and cranberries.
  6. Shape the dough into logs and wrap in plastic wrap. Chill for at least 1 hour.
  7. Slice the chilled dough into 1/4 inch thick rounds and place on a baking sheet.
  8. Bake for 12-15 minutes or until the edges are lightly golden.
  9. Let cool before serving.

Notes

  • For added flavor, you can substitute half of the pistachios with walnuts.
  • These cookies can be decorated with a drizzle of white chocolate if desired.
