Creamy Chicken Enchilada Soup

A deliciously creamy chicken enchilada soup that is perfect for any occasion.

Ingredients

  • 2 tablespoons olive oil
  • 1 pound chicken breast, cooked and shredded
  • 1 can diced tomatoes
  • 1 cup corn, frozen or canned
  • 1 can black beans, rinsed and drained
  • 4 cups chicken broth
  • 1 can enchilada sauce
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 cup heavy cream
  • 1 cup shredded cheese, for topping
  • 1/4 cup fresh cilantro, for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the cooked chicken and sauté for a few minutes.
  3. Stir in diced tomatoes, corn, black beans, chicken broth, enchilada sauce, cumin, garlic powder, and onion powder.
  4. Bring to a simmer and cook for 15 minutes.
  5. Reduce heat and stir in the heavy cream.
  6. Serve hot, topped with cheese and cilantro.

  • Can be made ahead of time and reheated.
