Creamy Lemon Garlic Salmon Piccata

  • 4 fillets salmon
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 tablespoon capers
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh parsley, chopped
  • Salt to taste
  • Pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Season the salmon fillets with salt and pepper and cook them in the skillet until golden brown.
  3. Remove the salmon and set aside.
  4. Add garlic to the skillet and sauté until fragrant.
  5. Pour in the chicken broth and lemon juice, scraping the bottom of the pan.
  6. Stir in the heavy cream and capers, then simmer until the sauce thickens.
  7. Return the salmon to the skillet and coat it with the sauce.
  8. Garnish with fresh parsley before serving.

  • For a lighter version, substitute heavy cream with half-and-half.
