Creamy Mushroom and Spinach Stuffed Sweet Potatoes

  • 4 medium sweet potatoes
  • 2 tablespoons olive oil
  • 1 cup chopped mushrooms
  • 2 cups fresh spinach
  • 1/2 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prick the sweet potatoes with a fork and bake for 45-60 minutes until tender.
  3. In a skillet, heat olive oil over medium heat and sauté the garlic and mushrooms until softened.
  4. Add spinach and cook until wilted.
  5. Mix in ricotta, Parmesan, salt, pepper, and nutmeg.
  6. Once the sweet potatoes are done, slice them open and fill with the creamy mixture.
  7. Return to the oven for another 10 minutes.
  8. Serve warm and enjoy!
