- 4 medium sweet potatoes
- 2 tablespoons olive oil
- 1 cup chopped mushrooms
- 2 cups fresh spinach
- 1/2 cup ricotta cheese
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon nutmeg
- Preheat the oven to 400°F (200°C).
- Prick the sweet potatoes with a fork and bake for 45-60 minutes until tender.
- In a skillet, heat olive oil over medium heat and sauté the garlic and mushrooms until softened.
- Add spinach and cook until wilted.
- Mix in ricotta, Parmesan, salt, pepper, and nutmeg.
- Once the sweet potatoes are done, slice them open and fill with the creamy mixture.
- Return to the oven for another 10 minutes.
