Creamy Roasted Red Pepper Pasta

This creamy roasted red pepper pasta with turkey bacon is a delicious and comforting dish perfect for any weeknight dinner.

Ingredients

  • 8 ounces pasta of your choice
  • 4 slices turkey bacon
  • 1 cup roasted red peppers, pureed
  • 1 cup heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh basil, chopped

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a skillet, cook the turkey bacon until crispy. Remove and crumble.
  3. In the same skillet, add the pureed roasted red peppers and cook for 2 minutes.
  4. Stir in the heavy cream, garlic powder, onion powder, salt, and pepper. Cook until heated through.
  5. Add the cooked pasta to the skillet and toss to coat.
  6. Stir in the Parmesan cheese and crumbled bacon. Mix well.
  7. Garnish with fresh basil before serving.

Notes

  • This dish can be made vegetarian by omitting the turkey bacon.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
