Crispy Egg Salad

A delicious and flavorful take on classic egg salad with the addition of crispy turkey bacon.

Ingredients

  • 6 large eggs
  • 4 slices turkey bacon
  • 1/4 cup mayonnaise
  • 1 tablespoon mustard
  • 1/4 cup chopped celery
  • 2 tablespoons chopped fresh parsley
  • Salt to taste
  • Pepper to taste

Instructions

  1. Place eggs in a pot and cover with water. Bring to a boil and cook for 10-12 minutes, then cool in an ice bath.
  2. Cook turkey bacon in a skillet until crispy. Remove and crumble once cooled.
  3. In a bowl, peel and chop the eggs, then add mayonnaise, mustard, celery, parsley, and season with salt and pepper.
  4. Add the crumbled turkey bacon to the egg mixture and stir until combined.
  5. Serve on bread, lettuce, or as desired.

Notes

  • For a creamier texture, add a little more mayonnaise.
  • Can substitute Greek yogurt for mayonnaise for a healthier option.
