  • 4 strips turkey bacon
  • 1 cup cooked chicken ham, diced
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1/4 cup green onions, chopped
  • 1/4 cup fresh parsley, chopped
  • Salt to taste
  • Pepper to taste

Instructions

  1. Boil the baby potatoes in salted water until fork-tender, about 15-20 minutes.
  2. Preheat the oven to 450°F (230°C).
  3. Drain the potatoes and let them cool slightly. Once cool, gently smash each potato with the bottom of a glass.
  4. Place the smashed potatoes on a baking sheet, drizzle with olive oil, and season with salt and pepper.
  5. Bake in the preheated oven until crispy, about 20-25 minutes.
  6. While the potatoes are baking, cook the turkey bacon until crispy and chop into pieces.
  7. In a large bowl, combine the diced chicken ham, mayonnaise, Dijon mustard, green onions, parsley, and the crispy turkey bacon.
  8. Once the potatoes are ready, let them cool slightly, then add them to the bowl and mix everything gently.
  9. Serve the potato salad warm or at room temperature.
