Crock Pot Birria Tacos

  • 2 pounds beef chuck roast
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 4 garlic cloves, minced
  • 3 dried guajillo peppers
  • 2 dried ancho peppers
  • 1 teaspoon ground cumin
  • 1 teaspoon oregano
  • 2 cups beef broth
  • 1 bay leaf
  • 12 corn tortillas
  • 1 cup chopped cilantro
  • 1 lime, cut into wedges

Instructions

  1. In a skillet, heat olive oil over medium heat. Add onion and garlic, sauté until fragrant.
  2. Toast dried peppers in a dry pan for a few minutes until fragrant, then remove stems and seeds.
  3. In a blender, combine sautéed onion and garlic, toasted peppers, cumin, oregano, and beef broth. Blend until smooth.
  4. Place the beef chuck roast in the crock pot and pour the sauce over it. Add bay leaf.
  5. Cook on low for 8 hours or until the meat is tender. Shred the meat.
  6. For serving, dip tortillas in the broth, fill with meat, and top with cilantro and lime juice.

Notes

  • For extra flavor, marinate the meat overnight.
  • Serve with your favorite salsa for added heat.
