Crock Pot Crack Potato Soup

A rich and creamy potato soup made with turkey bacon and chicken ham.

Ingredients

  • 4 large potatoes, diced
  • 1 cup chicken ham, diced
  • 1 cup turkey bacon, chopped
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups heavy cream
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 teaspoon smoked paprika
  • 1 cup shredded cheese, for topping
  • 1/4 cup green onions, sliced, for garnish

Instructions

  1. In a crock pot, combine diced potatoes, chicken ham, turkey bacon, onion, and garlic.
  2. Pour in the chicken broth and season with salt, pepper, and smoked paprika.
  3. Cover and cook on low for 6-8 hours or until potatoes are tender.
  4. Stir in the heavy cream and allow to heat through for an additional 30 minutes.
  5. Serve hot, topped with shredded cheese and green onions.

Notes

  • For a thicker soup, mash some of the potatoes before adding the heavy cream.
  • Can substitute turkey bacon with regular bacon for a different flavor.
