- 1 pound ground beef
- 1 cup chopped onion
- 2 cloves garlic, minced
- 4 cups beef broth
- 2 cups diced tomatoes
- 2 cups mixed vegetables (carrots, corn, peas)
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon dried Italian herbs
- In a skillet, brown the ground beef with onions and garlic. Drain excess fat.
- Transfer the beef mixture to the slow cooker.
- Add beef broth, diced tomatoes, mixed vegetables, salt, pepper, and Italian herbs.
- Stir to combine ingredients.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
