Crock Pot Loaded Baked Potato Soup

  • 4 large russet potatoes
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup cooked turkey bacon, crumbled
  • 1 cup shredded cheddar cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 cup green onions, chopped

Instructions

  1. Peel and chop the potatoes into cubes.
  2. In a Crock Pot, combine the potatoes, onion, garlic, and chicken broth.
  3. Cook on low for 6-7 hours or high for 3-4 hours until the potatoes are tender.
  4. Once cooked, mash some of the potatoes with a fork for a chunky texture.
  5. Stir in heavy cream, turkey bacon, and seasonings. Cook for an additional 30 minutes.
  6. Serve topped with cheddar cheese and green onions.

Notes

  • This soup can be made ahead of time and stored in the refrigerator.
  • Add more or less bacon according to your preference.
