Crockpot Beef Stew

A hearty and delicious crockpot beef stew perfect for warming up during cozy nights.

Ingredients

  • 2 pounds beef chuck, cut into 1-inch pieces
  • 4 cups beef broth
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 tablespoons Worcestershire sauce
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large skillet, brown the beef pieces on all sides.
  2. Transfer the beef to the crockpot.
  3. Add the carrots, potatoes, onion, and garlic.
  4. Stir in the beef broth, tomato paste, thyme, rosemary, Worcestershire sauce, salt, and pepper.
  5. Cover and cook on low for 8 hours or until the beef is tender.
  6. Adjust seasoning if necessary before serving.

Notes

  • For thicker stew, mix 2 tablespoons of cornstarch with cold water and stir in during the last hour of cooking.
  • Serve with crusty bread for an extra cozy meal.
