- 1 pound boneless, skinless chicken breasts
- 4 cups chicken broth
- 1 cup carrots, sliced
- 1 cup celery, sliced
- 1 teaspoon dried thyme
- 1/2 teaspoon black pepper
- 2 cups egg noodles
- 1/4 cup fresh parsley, chopped
- Place the chicken breasts in the bottom of the crockpot.
- Add the chicken broth, carrots, celery, thyme, and black pepper.
- Cover and cook on low for 6-8 hours, or until the chicken is cooked through.
- Once cooked, remove the chicken and shred it with two forks.
- Return the shredded chicken to the soup and add the egg noodles.
- Cook on high for an additional 30 minutes until noodles are tender.
