Crockpot Chicken Noodle Soup

  • 1 pound boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 2 cups egg noodles
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Place the chicken breasts in the bottom of the crockpot.
  2. Add the chicken broth, carrots, celery, thyme, and black pepper.
  3. Cover and cook on low for 6-8 hours, or until the chicken is cooked through.
  4. Once cooked, remove the chicken and shred it with two forks.
  5. Return the shredded chicken to the soup and add the egg noodles.
  6. Cook on high for an additional 30 minutes until noodles are tender.
  7. Stir in fresh parsley before serving.

  • For a richer flavor, add a splash of lemon juice before serving.
