Crockpot Chicken Noodle Soup

A warm and comforting Crockpot chicken noodle soup recipe that’s easy to prepare and perfect for weeknight dinners.

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 2 cups egg noodles
  • 1 cup carrots, chopped
  • 1 cup celery, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon parsley
  • Salt to taste
  • Pepper to taste

Instructions

  1. Place chicken breasts at the bottom of the crockpot.
  2. Add chicken broth, carrots, celery, onion, garlic, thyme, parsley, salt, and pepper.
  3. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  4. About 30 minutes before serving, shred the chicken in the crockpot.
  5. Stir in the egg noodles and cook until tender.
  6. Serve warm.

Notes

  • For extra flavor, add a squeeze of lemon juice before serving.
  • Use rotisserie chicken for a quicker option.
