- 1 pound boneless, skinless chicken breasts
- 4 cups chicken broth
- 2 cups egg noodles
- 1 cup carrots, chopped
- 1 cup celery, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon parsley
- Salt to taste
- Pepper to taste
- Place chicken breasts at the bottom of the crockpot.
- Add chicken broth, carrots, celery, onion, garlic, thyme, parsley, salt, and pepper.
- Cover and cook on low for 6-7 hours or high for 3-4 hours.
- About 30 minutes before serving, shred the chicken in the crockpot.
- Stir in the egg noodles and cook until tender.
