Crockpot Chicken Parmesan Soup

  • 1 pound boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 can (15 ounces) diced tomatoes
  • 1 cup uncooked pasta
  • 1 teaspoon Italian seasoning
  • 1 cup grated Parmesan cheese
  • 1 cup heavy cream
  • 1 tablespoon minced garlic

Instructions

  1. Place chicken in the bottom of the crockpot.
  2. Add chicken broth, diced tomatoes, pasta, garlic, and Italian seasoning; stir to combine.
  3. Cover and cook on low for 6-8 hours or until chicken is cooked through.
  4. Remove chicken, shred it, and return to the pot.
  5. Stir in heavy cream and Parmesan cheese, cooking for an additional 30 minutes.
