Crockpot Chicken Pho

A warm and soothing bowl of Crockpot Chicken Pho that brings comfort to cozy nights.

Ingredients

  • 1 pound boneless, skinless chicken thighs
  • 6 cups chicken broth
  • 1 onion, quartered
  • 3 cloves garlic, minced
  • 2 inches ginger, sliced
  • 2 star anise
  • 1 cinnamon stick
  • 2 tablespoons fish sauce
  • 1 tablespoon sugar
  • 8 ounces rice noodles
  • 1 lime, cut into wedges
  • 1 cup bean sprouts
  • 1 cup fresh basil

Instructions

  1. Add chicken thighs, broth, onion, garlic, ginger, star anise, cinnamon stick, fish sauce, and sugar to the crockpot.
  2. Cook on low for 6-8 hours or high for 4 hours until chicken is tender.
  3. Remove the chicken, shred it and return to the crockpot.
  4. Cook rice noodles according to package instructions, then add to the soup.
  5. Serve in bowls topped with lime wedges, bean sprouts, and fresh basil.

Notes

  • For extra flavor, you can add chili peppers for heat.
  • Adjust the fish sauce and sugar according to your taste.
