Ingredients

  • 1 pound chicken thighs
  • 8 cups chicken broth
  • 2 onions, halved
  • 3 cloves garlic, smashed
  • 1 ginger, sliced
  • 2 star anise
  • 1 cinnamon stick
  • 2 tablespoons fish sauce
  • 8 ounces rice noodles
  • 1 lime, juiced
  • 1 bunch fresh cilantro, chopped
  • 1 jalapeño, sliced

Instructions

  1. In a crockpot, combine chicken thighs, chicken broth, onions, garlic, ginger, star anise, and cinnamon stick.
  2. Cook on low for 6-8 hours or high for 4 hours until chicken is tender.
  3. Remove chicken, shred it, and return to the broth.
  4. Prepare rice noodles according to package instructions.
  5. Serve pho in bowls with noodles, chicken, and garnish with lime, cilantro, and jalapeño.

Notes

  • Adjust the spice level by adding more or less jalapeño.
  • Make it a vegetarian dish by substituting chicken with tofu and using vegetable broth.
