Crockpot Chicken Pot Pie Soup

  • 1 pound boneless, skinless chicken breasts
  • 1 cup diced carrots
  • 1 cup diced potatoes
  • 1 cup frozen peas
  • 1/2 cup chopped onion
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup heavy cream
  • 1/4 cup all-purpose flour
  • 1 tablespoon olive oil

Instructions

  1. Heat olive oil in a skillet over medium heat. Sauté onions and garlic until translucent.
  2. Add the sautéed mixture, chicken, carrots, potatoes, thyme, salt, pepper, and broth to the crockpot. Cook on low for 6 hours or high for 3 hours.
  3. Once the chicken is cooked, shred it using two forks and return it to the crockpot.
  4. In a separate bowl, mix the heavy cream and flour until smooth. Stir into the soup and continue cooking on high for another 30 minutes.
  5. Stir in the frozen peas and let it heat through.
  6. Serve hot and enjoy your comforting soup!

Notes

  • For a thicker soup, add more flour to the cream mixture.
  • Feel free to add other vegetables like corn or green beans.
