  • 1 pound chicken breast
  • 4 slices turkey bacon
  • 4 cups chicken broth
  • 2 cups carrots, diced
  • 2 cups potatoes, diced
  • 1 cup peas
  • 1 cup corn
  • 1/2 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 teaspoon black pepper
  • 1 cup heavy cream
  • 1/4 cup flour
  • 2 tablespoons butter

Instructions

  1. Cook the turkey bacon in a skillet over medium heat until crispy. Remove and chop.
  2. In the crockpot, add chicken, broth, carrots, potatoes, peas, corn, onion, garlic, thyme, and black pepper.
  3. Place the lid on and cook on low for 6-8 hours or high for 3-4 hours.
  4. Before serving, whisk together heavy cream and flour, then stir into the soup.
  5. Allow the soup to thicken for about 30 minutes, then serve warm.
