  • 2 pounds boneless, skinless chicken thighs
  • 6 cups chicken broth
  • 2 cups ramen noodles
  • 1 cup sliced carrots
  • 1 cup sliced mushrooms
  • 4 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon ginger, grated
  • 2 green onions, chopped

Instructions

  1. Place chicken thighs in the crockpot.
  2. Pour in the chicken broth and add garlic, soy sauce, and ginger.
  3. Top with carrots and mushrooms.
  4. Cook on low for 6-8 hours or on high for 3-4 hours.
  5. Remove the chicken, shred it, and return it to the pot.
  6. Add ramen noodles and cook for an additional 15 minutes.
  7. Serve topped with green onions.
