Crockpot Chicken Tortilla Soup

A comforting and flavorful crockpot chicken tortilla soup perfect for family nights.

Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 4 cups chicken broth
  • 1 cup tortilla chips, crushed
  • 1 cup shredded cheese
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Place the chicken, black beans, corn, diced tomatoes, onion, garlic, chili powder, cumin, and chicken broth in a crockpot.
  2. Cook on low for 6-8 hours or high for 3-4 hours.
  3. Once the chicken is cooked through, shred it with two forks and mix back into the soup.
  4. Before serving, stir in the crushed tortilla chips and cheese until melted.
  5. Garnish with fresh cilantro.

Notes

  • For a spicier version, add diced jalapeños or more chili powder.
  • This soup can be served with avocado slices and additional cheese on top.
