Crockpot Creamy Chicken Wild Rice Soup

Ingredients

  • 1 pound chicken breast
  • 1 cup wild rice
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. In a skillet, heat the olive oil over medium heat. Add onions, carrots, and celery. Sauté until softened.
  2. Add garlic and cook for another minute.
  3. Transfer the sautéed vegetables to the Crockpot.
  4. Add chicken broth, chicken breast, wild rice, thyme, and rosemary to the Crockpot.
  5. Cook on low for 6-7 hours or high for 3-4 hours.
  6. Once cooked, remove the chicken, shred it, and return it to the soup.
  7. Stir in the heavy cream and season with salt and pepper.
  8. Serve hot and enjoy!

Notes

  • For a thicker soup, you can add a cornstarch slurry.
  • Feel free to add your favorite vegetables!
