Crockpot Creamy French Onion Chicken and Orzo

  • 2 pounds chicken thighs
  • 1 large onion, sliced
  • 2 cups beef broth
  • 1 cup heavy cream
  • 1 cup orzo pasta
  • 1 teaspoon garlic powder
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 1 cup shredded cheese (Gruyère or Swiss)

Instructions

  1. In a crockpot, combine chicken thighs, sliced onions, beef broth, garlic powder, thyme, salt, and pepper.
  2. Cook on low for 6-8 hours or until chicken is cooked through.
  3. Remove chicken and shred it, then return to the crockpot.
  4. Add heavy cream and orzo, stir to combine, and cook on high for an additional 30 minutes, until orzo is tender.
  5. Stir in shredded cheese until melted and creamy.
  6. Serve warm, garnished with fresh herbs if desired.

Notes

  • You can substitute chicken breasts if preferred.
